Challenge #1: Vegetable Shmegetable

As many of you who have children can attest, post-baby life is vastly different from pre-baby life. Pre-baby, we ate french fries, frozen pizza and more that our fill of fast food. Post-baby, we're trying to eat healthier. We haven't had fast food in what feels like ages and we eat out of a box as little as possible. We've found that we feel better both physically and mentally. As new parents, we have to be on top of our game, right?

So my challenge to myself this month is to find 10 veggies that we aren't familiar with and give them a shot. First on my list is parsnips. I picked them up at the store on a whim...they looked cool. So I've done a little reading and apparently they're very similar to carrots but can also be mashed as a substitute for mashed potatoes. I have yet to decide how I'm going to prepare them, but they will be eaten!! Stay tuned...

Welcome and Hello

Hello reader!

Before we get started, I'd like to introduce myself. I'm a 24 year old mother of a 4 month old. We live with my boyfriend/baby daddy and our three dachshunds.

On my list of 'to dos' are projects such as finally organizing the entire house, losing the baby weight, cooking delicious meals, and finding the perfect pair of black heels. The purpose of this blog is to share what I learn as I attempt to cross things off of that list and to hold myself accountable...or the list will never get done.
